The Heart of Indian Cuisine

Authentic North Indian curries are built from a few core ingredients and then adjusted by region, by the main protein, and by whether the curry is gravy-based or dry. The core is onion, garlic, ginger, fresh tomatoes (never canned), garam masala, coriander powder, freshly ground turmeric and red chilli: the onion, garlic and ginger are slow-cooked in ghee or oil until deep and sweet, the fresh tomatoes are cooked down, the ground spices go in last so they do not burn, and whole spices such as cumin, cardamom, cloves, cinnamon and bay leaf are tempered first for aroma. Region changes the finish: Punjab adds butter, cream and dried fenugreek (Butter Chicken, Dal Makhni), Uttar Pradesh and Delhi lean on yoghurt and whole garam masala (Chicken Curry Homestyle, Lamb Curry), and Rajasthan uses more dried red chilli and less tomato. The protein sets the cooking time (lamb longest, chicken shorter, paneer and vegetables last), and gravy curries such as Butter Chicken and Lamb Kadhai are finished with cream, yoghurt or butter, while dry or semi-dry sabzis such as Aloo Gobi and Bhindi Masala keep the same base with little or no liquid. At Masala & More, Baltzarsgatan 12, Malmö, all masalas are ground in-house, no ready-made pastes are used, and no artificial colour goes in: the red of Butter Chicken comes from tomatoes and Kashmiri chilli, not dye.

The Aromatic Base: Onion, Garlic, Ginger, and Tomato

Nearly every Indian curry starts with onions slowly browned in oil or ghee. This is followed by fresh garlic and ginger paste. Tomatoes are then cooked down until the oil separates—a step called bhuna. This process concentrates flavour and gives curries their deep colour and body.

At Masala & More the tomatoes are always fresh, never canned, and no artificial colour is used anywhere in the kitchen: the red of our Butter Chicken comes from cooked-down tomatoes and Kashmiri chilli, not dye. The same base is then adjusted by region, by protein and by whether the dish is a gravy curry or a dry sabzi. Punjab adds butter, cream and dried fenugreek, Uttar Pradesh and Delhi lean on yoghurt and whole garam masala, Rajasthan uses more dried red chilli and less tomato, and lamb cooks longest, chicken shorter, paneer and vegetables last.

The Essential Spices

The core spice box, or masala dabba, of Indian cooking includes cumin seeds, coriander powder, turmeric, red chilli powder, and garam masala. Garam masala is a warming blend of cinnamon, cardamom, cloves, and black pepper added at the end of cooking. Whole spices like bay leaf, black cardamom, and cinnamon stick are often bloomed in hot oil first to release their aroma.

Richness: Ghee, Cream, Yoghurt, and Cashews

Dishes like butter chicken and shahi paneer get their silky texture from ghee (clarified butter), cream, or a cashew paste. Yoghurt serves a dual purpose: it is used both as a marinade for tandoori dishes and to add tang to gravies. Kasuri methi (dried fenugreek leaves), crushed over the finished dish, is the secret touch that makes restaurant curries taste complete.

The Art of Balancing Flavours

Creating a perfect Indian curry is an art. It requires balancing the spices, the richness, and the tanginess. Each ingredient plays a crucial role in achieving that authentic taste. At Masala & More, we take pride in our ability to balance these elements, ensuring that every bite is a delightful experience.
