Masala & More·9 Oct 2026·2 min read

Sweden has hundreds of Indian restaurants, but most cook a generic restaurant-style menu: one base sauce, a few spice mixes, and dishes that taste the same from Stockholm to Göteborg. Authentic Indian cooking is different, and it is worth travelling for. Masala & More at Baltzarsgatan 12 in Malmö is one of the few places in Sweden that cooks it the way it is cooked in Punjab and Delhi.

What makes Indian food authentic

Three things. First, the base: every curry starts with onion, garlic, ginger and tomato cooked down slowly in ghee until it turns deep and sweet, not a pre-made sauce. Second, the spices: whole cumin, cardamom, cloves, cinnamon and bay leaf are tempered in hot fat, and the ground masalas are blended in the kitchen rather than bought in a jar. Third, the tandoor: a real clay oven heated to around 480°C that bakes naan and roti in under a minute and gives tandoori bread the smoky char you cannot get from an electric oven.

The dishes to look for

Dal Makhni — black lentils simmered overnight with butter and cream. The dish most Punjabis judge a restaurant by.

Butter Chicken (169 kr) — Delhi's most famous export, mild and creamy, made here with halal chicken.

Bone-in Tandoori Chicken Biryani — our bestseller. Chicken marinated and cooked in the tandoor first, then layered with saffron basmati rice.

Lamb Kadhai (199 kr) — lamb on the bone stir-fried with capsicum, onion and crushed coriander seed in an iron kadhai.

Thali combos — dal, a curry, rice, tandoori bread, raita and salad on one plate, the way a home meal is served.

Street food — a 13-dish chaat menu with Golgappe, Dahi Puri and Delhi Aloo Chaat made to order.

Halal, vegetarian and vegan
